The bunches of the oldest vines are fermented in small white oak casks, while the extensive elevage sur lies calls for the use of cork caps. The wine is a deep, lustruous yellow, topped by a lush and creamy foam and enriched by an interminably persistent bead.
An ample and kaleidoscopic array of aromas is in perpetual transformation, morphing from ripe yellow fruit to polyfloral honey, from pastry to candied
citrus fruit, all the way to fleeting hints of smokiness and bay leaves.
