Plum Cake al cocco

INGREDIENTS

  • g 500 sugar
  • n 2 vanilla beans
  • g 450 Butter
  • g 100 custard
  • g 700 egg
  • g 200 Milk at 32°C
  • g 800 white flour
  • g 20 powder yeast
  • g 300 coconut powder

PROCEDURE

Whip the butter, sugar, vanilla and custard in the planetary mixer.
Sift the flower with the yeast two times.
Slowly incorporate the eggs and milk while alternating half of the sifted flower yeast.
Add the other half of the flower with the same method and finally the coconut.
Put the mixture in the stencil.
Cook at 170-180°C
